Comparación de dos modelos de producción (pastoreo e intensivo) y su relación en la calidad de huevos y bienestar de gallinas de postura

Abstract
RESUMEN: La producción de huevos en el mundo se basa en la implementación de modelos intensivos, ya que estos permiten un mayor manejo y control de las aves, incrementando la eficiencia productiva, al operar bajo altas densidades de alojamiento (No. Aves/m2), lo cual compromete el bienestar animal; por lo tanto, se presentan los sistemas de producción en pastoreo como una opción más natural para la crianza de gallinas ponedoras, al permitir a las aves el acceso a un espacio donde pueden expresar sus comportamientos naturales. Sin embargo, aún existe desconocimiento sobre la influencia del sistema de producción en el bienestar animal y la calidad del producto final, por lo tanto en la presente investigación se realizó una revisión de fuentes secundarias, en los que se analizaron experiencias nacionales e internacionales, con el fin de conocer y promover indirectamente la implementación de estos sistemas de producción, y brindar a los productores y profesionales de la producción animal, elementos teóricos que le permitan elegir un modelo de producción acorde a sus necesidades y objetivos. En esta se evidenció que el sistema de producción influye en la calidad del huevo, ya que las aves en pastoreo, al tener disponibilidad de forrajes para su consumo, presentan un mayor contenido de albumen, lisozima, colesterol y grosor de la cáscara, en comparación con los sistemas intensivos (jaula y piso); en cuanto a bienestar animal, las aves presentes en el sistema en pastoreo, tienen un menor temor hacia los seres humanos, menor agresividad, mejores condiciones de plumaje y disminución al riesgo de presentar osteoporosis, sin embargo, las aves no utilizan toda el área en pastoreo, se mantienen cerca al refugio, por lo que presentan problemas en el manejo de excretas alrededor de este y una mayor prevalencia de enfermedades parasitarias. ABSTRACT : Egg production in the world is based on the implementation of intensive models, as these allow greater management and control of birds, increasing production efficiency, operating under high stocking densities (No. Birds / m2), the compromising animal welfare; therefore, production systems grazing as a more natural for raising laying hens, to allow birds access to a space where they can express their natural behaviors occur option. However, there is still lack of knowledge about the influence of the production system in animal welfare and the quality of the final product generated, therefore in this investigation a review of secondary sources, in which national and international experiences were analyzed was performed, in order to know and indirectly promote the implementation of these production systems, and provide producers and animal production professionals, theoretical elements that allow you to choose a production model that suits your needs and objectives. This was evident that the production system influences the quality of the egg, as birds grazing, have access to forage intake, have a higher content of albumen, lysozyme, cholesterol and shell thickness, compared to the (cage and floor) as for animal welfare, the birds present in the system grazing, intensive systems have less fear of humans, less aggressive, better conditions plumage and decrease the risk of osteoporosis.
